Tangy Lemon Snow Balls

Do you love having a ball? Of course you do! And these tangy, tasty lemon balls are the wholefood treat to make it happen!

Tangy Lemon Snow Balls

These light and tasty morsels made their first appearance in my Spring Cleanse Program but everyone needs a sneaky sweet treat now and then, so sharing here too.


There are no nuts in these balls, so they can happily go in school lunch boxes. Yay!


Being nut-free makes them lighter and brighter in looks, taste and digestion. That's real Spring eating, but good any time of year.


The main ingredient of these lovely balls is coconut, but I think the best part is the lemon.


It adds that fresh, springy, zesty flavour that is super uplifting and light. That’s what you’ll really love about these tasty healthy snacks.


The fact they’re a sweet little pick-me-up with nothing artificial and no refined sugar is a total bonus!


My tangy lemon snow balls are a perfect example of how delicious healthy wholefood snacks can be. Real flavour. Natural sweetness. A whole bunch of goodness.


This is how you make them:


WHAT YOU NEED:

  • 2.5 cups organic desiccated coconut (plus a little more for rolling)

  • 5-6 soft, organic dried apricots (preferably sulphite free)

  • 3 TBSP Maple Syrup

  • 3 TBSP coconut milk

  • 2 TBSP Coconut Oil, melted

  • Juice & Zest from 1 lemon

WHAT TO DO

  1. Put everything in a blender and mix on medium speed about 30 seconds.

  2. Scrape down sides, blend to again. Repeat once or twice more until the mix is completely blended and broken down.

  3. Shape into acorn size balls and roll in extra coconut.

  4. Set in fridge 30mins.

Remember - only take what you need!


You might want to eat them all, but one or two is TRULY enough!
